One thing -- "Mechanical Turk" is actually a wonderfully apt name. It refers to the phony automaton created by Wolfgang von Kempelen in 1770. (Yes, I had to check wikipedia for those particular facts -- &lt;br&gt;&lt;a href="http://en.wikipedia.org/wiki/The_Turk" rel="nofollow"&gt;http://en.wikipedia.org/wiki/T...&lt;/a&gt; ). It pretended to be a chess-playing robot, essentially, and wowed spectators until it was revealed to be hiding a person inside who was actually choosing the moves and operating the machine. &lt;/p&gt;

&lt;p&gt;This Amazon service is similar, in that it presents a facade of automation (and the ease of integration with truly systematic processes that goes along with it) over actual human intelligence. Sodium chloride is the quintessential flavor enhancer. Bacon is a flavor enhancer. So are cumin, sugar, vegetable stock, and lemon juice. &lt;/p&gt;

&lt;p&gt;Those types of flavor enhancers aren't used because cooking has removed the flavor. They're used because cooking is a process of adding flavor. And disodium inosinate isn't a lab-created chemical, but a fruit or animal extract (depending on how it's made) that's been used for centuries to boost umami. Is it somehow better or worse than any other flavor enhancer?I actually don't know the answer to that or whether or not disodium inosinate should go into food.
